Cheddar Cornbread
Muffins With Bacon
4 tbsp Butter, melted 1 c All Purpose Flour 1 c Cornmeal 1 tsp Sugar 1 tsp Baking Powder 1/2 tsp Salt 1 Egg 3/4 c Milk 1 c Cheddar Cheese 8 slices Bacon, crisped and chopped |
Preheat oven to 375 with rack in middle position. Melt butter in a small pan. Place all dry ingredients in a bowl and stir until well mixed. Whisk the milk and egg together in a large bowl followed by dry ingredients. Add 1 cup of cheese and stir to combine. Divide batter into muffin cups. Sprinkle tops with bacon pieces and bake 12 minutes. Cool 5 minutes before removing from pan. |
